Steps

  1. 1Put the mashed sweet potato in a bowl and let it cool until warm, not steaming. This keeps the egg from cooking while you mix.
  2. 2Put the spinach in a dry skillet over medium heat. Stir for 2 to 3 minutes until it wilts, then move it to a plate and press out excess water once it is cool enough to handle.
  3. 3Chop the wilted spinach and stir it into the sweet potato with the egg, oats, paprika, garlic powder, and salt. Let the mixture stand for 5 minutes so the oats absorb moisture.
  4. 4Warm a nonstick griddle or skillet over medium heat for 2 minutes and lightly spray the surface.
  5. 5Scoop 1/4-cup portions onto the pan and flatten them to about 1/2 inch thick. Keep space between cakes so you can slide a spatula under each one.
  6. 6Cook for 4 minutes, until the edges look dry and the bottom releases. Flip carefully and cook the second side for 3 to 4 minutes.
  7. 7Serve warm with cottage-cheese sour cream or a squeeze of lemon. Refrigerate leftovers and reheat them on a dry skillet.

Grit & Soul tip

Squeeze water from the spinach before mixing. Wet spinach is the fastest way to make a griddle cake fall apart.

For the people who read the story

The memory belongs below the recipe.

This keeps the sweet potato idea but gives it a savory green backbone, so the plate feels like lunch or dinner instead of only breakfast.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

A hot side and a cooler side give you sear, control, and a place to finish without burning the outside.

Watch for

Dry the surface before it hits the grate. Moisture has to leave before browning can begin.

Make it yours

Finish with something bright: pickles, herbs, citrus, vinegar sauce, or a sharp slaw.
