Steps

  1. 1Add the cottage cheese, lemon juice, vinegar, salt, and pepper to a blender or food processor. A small blender works best for this amount.
  2. 2Blend for 30 seconds, stop, scrape down the sides, and blend again until the curds disappear and the mixture looks smooth.
  3. 3If it is too thick to spoon, add water 1 teaspoon at a time and blend after each addition. Stop when it has the thickness of sour cream; too much water makes it runny.
  4. 4Taste it. Add another small squeeze of lemon for brightness or a pinch of salt if it tastes flat.
  5. 5Spoon into a covered container and refrigerate for at least 15 minutes so it thickens and the tang settles.
  6. 6Use it on baked potatoes, tacos, griddle buns, chili, or as the base of a dip. Keep refrigerated and use within 3 days.

Grit & Soul tip

Low-fat and nonfat cottage cheese vary in moisture. The water is optional; add it only if the blender needs help moving.

For the people who read the story

The memory belongs below the recipe.

This is the useful swap: cool, tangy, and creamy enough to finish a potato without asking the rest of the plate to carry all the flavor.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
