Steps

  1. 1Wash the sweet potatoes and pierce each one several times with a fork. Microwave until completely soft, about 6 to 10 minutes total, turning halfway, or bake at 400°F until a fork slides through the center.
  2. 2Let the potatoes cool until you can handle them. Split them open, scoop the flesh into a bowl, and mash until no large lumps remain.
  3. 3Add the egg, flour, baking powder, salt, pepper, and scallions. Stir until the mixture looks like a thick, scoopable batter. If it is loose, add flour 1 tablespoon at a time.
  4. 4Place a griddle or large nonstick skillet on the stove over medium heat. Let it warm for 2 minutes, then lightly spray or brush the surface; it should look lightly coated, not wet with oil.
  5. 5Scoop about 1/3 cup of batter onto the hot surface for each bun. Flatten each mound to about 1/2 inch thick and 4 inches wide so the center cooks before the outside gets too dark.
  6. 6Cook for 4 to 5 minutes. The bottom is ready when it is firm and browned and the top no longer looks wet. Flip with a wide spatula and cook the second side for 3 to 4 minutes.
  7. 7Move the buns to a rack or plate and let them stand for 3 minutes. Use them warm as sandwich buns, breakfast rounds, or a side for soup.

Grit & Soul tip

The mixture should hold a mound on the spoon. Too much moisture makes the buns fragile, so fix a loose batter with a spoonful of flour before cooking the whole batch.

For the people who read the story

The memory belongs below the recipe.

This is the low-fat griddle move: a soft vegetable base, a little structure, and enough browning to make the bun feel like a real part of dinner.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

A hot side and a cooler side give you sear, control, and a place to finish without burning the outside.

Watch for

Dry the surface before it hits the grate. Moisture has to leave before browning can begin.

Make it yours

Finish with something bright: pickles, herbs, citrus, vinegar sauce, or a sharp slaw.
