Steps

  1. 1Peel the potatoes and grate them on the large holes of a box grater. Grate the onion into the same bowl.
  2. 2Scoop the potato mixture into a clean towel and twist firmly over the sink until no more liquid drips out. Dry potato is what makes a crisp cake.
  3. 3Put the dry potato back in the bowl and stir in the egg white, flour, salt, and pepper until every shred is lightly coated.
  4. 4Warm a nonstick griddle over medium heat for 2 minutes. Lightly spray or brush it; do not pour oil across the pan.
  5. 5Place small handfuls of potato on the hot surface and press each one flat to about 1/4 inch thick. Smaller cakes are easier to flip than one large rosti.
  6. 6Cook for 4 to 5 minutes without moving them. Flip when the underside is golden and the edges look crisp, then cook 3 to 4 minutes on the second side.
  7. 7Move the cakes to a rack or plate, sprinkle lightly with salt, and serve with cottage-cheese sour cream and lemon.

Grit & Soul tip

Do not crowd the griddle. Crowding traps steam and gives you soft potato instead of crisp edges.

For the people who read the story

The memory belongs below the recipe.

The inspiration is the crisp potato pancake, adapted for a lighter griddle and a small, manageable serving that still feels like real comfort food.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

A hot side and a cooler side give you sear, control, and a place to finish without burning the outside.

Watch for

Dry the surface before it hits the grate. Moisture has to leave before browning can begin.

Make it yours

Finish with something bright: pickles, herbs, citrus, vinegar sauce, or a sharp slaw.
