Steps

  1. 1Heat the oven to 425°F. Scrub the potatoes, dry them, and poke each one several times with a fork so steam can escape.
  2. 2Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45 to 60 minutes, until a fork slides into the center easily.
  3. 3While the potatoes bake, rinse the beans under cool water and let them drain. Warm them in a small saucepan over medium-low heat with the smoked paprika and a pinch of pepper.
  4. 4When the potatoes are soft, let them cool for 5 minutes. Cut each potato lengthwise and gently press the ends so the center opens without tearing the skin.
  5. 5Top each potato with cottage-cheese sour cream, warm beans, salsa, tomato, and scallions. Taste before adding salt because the salsa may already be seasoned.
  6. 6Serve immediately while the potato is hot and the topping is cool. Save toppings separately if packing leftovers so the potato does not become watery.

Grit & Soul tip

A baked potato is done when the center gives easily to a fork, not just when the skin looks wrinkled. Give large potatoes extra time.

For the people who read the story

The memory belongs below the recipe.

This is loaded-potato comfort with the heavy parts moved aside: beans for substance, cottage cheese for tang, and salsa for the hit of flavor.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
