Steps

  1. 1Put the halved potatoes in a pot, cover with cool water by 1 inch, add a pinch of salt, and bring the pot to a boil over high heat.
  2. 2When the water boils, lower the heat to medium so it bubbles steadily. Cook 10 to 12 minutes, until a fork passes through the largest potato.
  3. 3Drain the potatoes and leave them in the warm pot for 1 minute so steam escapes. Season lightly with pepper and let them cool for 5 minutes.
  4. 4Blend the cottage cheese, water or milk, lemon juice, dill, garlic powder, and onion powder until smooth. Add liquid 1 teaspoon at a time if the blender needs help.
  5. 5Put lettuce or cabbage in two bowls. Add the warm potatoes, cucumber, and tomato.
  6. 6Spoon the cottage-cheese ranch over the bowls and toss gently. Taste before adding salt because cottage cheese can vary in sodium.

Grit & Soul tip

Keep the vegetables cold and the potatoes warm. That contrast makes a lighter bowl feel more satisfying.

For the people who read the story

The memory belongs below the recipe.

This is the bowl version of the baked-potato idea: warm starch, cool crunch, and a ranch-style finish without a heavy dressing.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
