Steps

  1. 1Add the cottage cheese, roasted pepper, cumin, paprika, lime juice, and water to a blender. Blend until completely smooth.
  2. 2Pour the blended mixture into a small saucepan and set the burner to low. Stir every minute so the dairy warms evenly instead of sticking.
  3. 3When the mixture is hot but not boiling, add the cheddar a little at a time and stir until each addition melts before adding more.
  4. 4If the queso is too thick, stir in warm water one teaspoon at a time. If it is too thin, keep stirring over low heat for another 2 minutes.
  5. 5Taste carefully and add salt only after the cheese is melted. Serve warm with vegetables, baked tortilla wedges, or potato griddle cakes.

Grit & Soul tip

Low-fat cottage cheese can separate if boiled. Keep the heat low and remove the pan as soon as the queso is smooth.

For the people who read the story

The memory belongs below the recipe.

Social video cooks made blended cottage cheese sauces approachable; this version turns that idea into a warm, lighter dip with beginner-safe heat instructions.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
