Steps

  1. 1Add the cottage cheese, banana, egg, oats, baking powder, and cinnamon to a blender. Blend until mostly smooth and let the batter stand for 5 minutes.
  2. 2Warm a nonstick skillet over medium-low heat for 2 minutes. Lightly spray the surface; the pan should be warm, not smoking.
  3. 3Spoon 2 tablespoons of batter for each pancake. Keep them small because small pancakes are easier to turn without tearing.
  4. 4Cook for 2 to 3 minutes, until bubbles appear and the edges look set. Slide a thin spatula underneath and flip once.
  5. 5Cook the second side for 1 to 2 minutes. Lower the heat if the outside browns before the center feels firm.
  6. 6Serve with berries or a spoonful of cottage-cheese sour cream. Refrigerate leftovers and reheat in a dry skillet.

Grit & Soul tip

Use medium-low heat. Cottage cheese makes the batter moist, so the center needs time to cook through.

For the people who read the story

The memory belongs below the recipe.

The social-video pancake trend works because blending cottage cheese changes its texture; this version keeps the ingredients simple and the instructions forgiving.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
