Steps

  1. 1Add cottage cheese, lemon juice, garlic, salt, and pepper to a blender or food processor.
  2. 2Blend until smooth, stopping once to scrape the sides. Do not add the herbs yet if you want visible green flecks.
  3. 3Add water 1 teaspoon at a time until the dip is thick but scoopable. It should sit on a chip or vegetable instead of running off.
  4. 4Stir in the dill or parsley by hand. Taste and adjust the lemon, salt, or pepper.
  5. 5Chill for 10 minutes before serving. The garlic becomes less sharp and the dip thickens as it cools.
  6. 6Serve with potato griddle buns, vegetables, or as a sandwich spread. Refrigerate leftovers and use within 3 days.

Grit & Soul tip

Blend the cottage cheese smooth first, then fold in herbs. That keeps the dip creamy and gives it a fresh, visible finish.

For the people who read the story

The memory belongs below the recipe.

A good low-fat dip should not taste like a punishment. Lemon, garlic, and herbs give this one a reason to disappear from the table.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
