Steps

  1. 1Heat the oven to 350°F. Line a rimmed baking sheet with parchment and lightly spray the paper so the flatbread can release.
  2. 2Blend the cottage cheese, eggs, garlic powder, Italian seasoning, and salt for 30 to 45 seconds until smooth.
  3. 3Pour the batter onto the center of the prepared sheet. Use the back of a spoon to spread it into an even rectangle about 1/4 inch thick.
  4. 4Bake for 25 to 30 minutes. The center should look set and the edges should be lightly golden; do not judge doneness by color alone.
  5. 5Let it cool on the pan for 5 minutes, then loosen the edges with a spatula. Cut it into wrap-sized pieces or top it lightly and return it to the oven for 3 minutes.
  6. 6Use immediately for the softest texture, or cool completely and refrigerate covered for up to 2 days.

Grit & Soul tip

Spread the batter evenly. Thin spots dry out before the center is finished, while thick spots stay soft.

For the people who read the story

The memory belongs below the recipe.

This adapts the short-form cottage-cheese flatbread idea into a flexible base for wraps, small pizzas, and snack plates.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

Baking rewards control more than improvisation. A fully heated oven and an even pan give the crust a fair start.

Watch for

Let the center set before slicing. The carryover heat is part of the recipe, not a delay.

Make it yours

Add one small personal mark: orange zest, cracked pepper, a honey finish, or a different pan.
