Steps

  1. 1Add the cottage cheese, frozen berries, maple syrup, lemon juice, and vanilla to a blender or food processor.
  2. 2Blend for 45 seconds, stop to scrape the sides, and blend again until smooth. The frozen berries should make the mixture thick like soft-serve.
  3. 3Taste the mixture before adding more sweetener. Frozen berries vary in tartness, so add another teaspoon only if needed.
  4. 4Eat it immediately as a soft dessert, or spoon it into two containers and refrigerate for 30 minutes for a thicker texture.
  5. 5For a firmer frozen texture, freeze for 45 minutes and stir once halfway through so it does not freeze into a solid block.
  6. 6Top with oats or a few berries just before serving. Keep leftovers covered and use within 2 days.

Grit & Soul tip

Do not freeze it overnight and expect ice-cream texture. The low-fat mixture becomes very firm, so use the shorter chill and stir method.

For the people who read the story

The memory belongs below the recipe.

Cottage cheese works here because blending changes the texture completely: the result is cool, creamy, tangy, and built from ingredients you can recognize.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

Baking rewards control more than improvisation. A fully heated oven and an even pan give the crust a fair start.

Watch for

Let the center set before slicing. The carryover heat is part of the recipe, not a delay.

Make it yours

Add one small personal mark: orange zest, cracked pepper, a honey finish, or a different pan.
