Steps

  1. 1Cook onion and bell pepper until soft in a cast iron pot or smoker-safe pan.
  2. 2Stir in garlic, beans, BBQ sauce, stock, mustard, and rub.
  3. 3Fold in chopped burnt ends so the bark stays visible on top.
  4. 4Smoke uncovered until the beans bubble and the sauce darkens.
  5. 5Stir once or twice, adding a splash of stock if the pot tightens too much.
