Steps
- 1Add cheeses, cooked sausage, tomatoes, jalapenos, and seasoning to a smoker-safe pan.
- 2Smoke uncovered until the edges bubble and the top takes on light smoke.
- 3Stir in evaporated milk or cream until the texture loosens.
- 4Keep smoking until everything melts into one pan.
- 5Taste for salt and heat before serving.
- 6Hold warm and stir occasionally so the bottom does not tighten up.
