Steps

  1. 1Marinate the pork with orange juice, lime juice, garlic, oregano, cumin, salt, and pepper.
  2. 2Roast or sear and braise until the pork is tender and sliceable.
  3. 3Rest the pork before slicing so the juices stay in the meat.
  4. 4Warm black beans and rice while the pork rests.
  5. 5Spoon rice onto plates, add beans, sliced pork, pickled red onion, and a little mojo sauce.
  6. 6Finish with lime at the table so the plate stays bright.

Grit & Soul tip

Mojo should taste bright before it tastes heavy. Keep the citrus and garlic clear, then let the pork bring the richness.

For the people who read the story

The memory belongs below the recipe.

This plate belongs in the Global Table lane because it feels useful and specific: pork, rice, beans, acid, and a clean reason to save it.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
