Steps
- 1Heat the oven to 400°F and lightly spray a rimmed baking sheet.
- 2Blend the cottage cheese for 20 seconds so there are no large curds. Add it to a bowl with turkey, oats, egg, Italian seasoning, garlic powder, salt, and pepper.
- 3Mix with clean hands or a fork just until combined. Do not knead the mixture or the meatballs can become dense.
- 4Scoop about 2 tablespoons for each meatball and roll gently. Place them 1 inch apart on the baking sheet.
- 5Bake for 18 to 22 minutes. Cut one open at the center; it should be fully cooked with no pink, and the internal temperature should reach 165°F.
- 6Rest for 5 minutes, then serve with warm marinara, pasta, or a grain bowl.
Grit & Soul tip
Wet your hands before rolling. Lean turkey sticks less and the meatballs stay tender when handled lightly.

The memory belongs below the recipe.
Cottage cheese is used as a moisture swap inside lean turkey instead of adding extra oil or a heavy sauce.
Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.
