Steps

  1. 1Marinate chicken with oil, lemon, garlic, oregano, salt, and pepper.
  2. 2Grill or sear until the chicken has color and cooks through.
  3. 3Rest the chicken before slicing so the bowl stays juicy.
  4. 4Build bowls with quinoa or rice, roasted vegetables, cucumber, and herbs.
  5. 5Add sliced chicken and spoon sauce over the top.
  6. 6Finish with lemon right before serving.

Grit & Soul tip

Healthy bowls still need contrast. Keep something charred, something fresh, and something creamy.

For the people who read the story

The memory belongs below the recipe.

This is the clean-lane dinner that still belongs here because it tastes cooked, seasoned, and worth repeating.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

A hot side and a cooler side give you sear, control, and a place to finish without burning the outside.

Watch for

Dry the surface before it hits the grate. Moisture has to leave before browning can begin.

Make it yours

Finish with something bright: pickles, herbs, citrus, vinegar sauce, or a sharp slaw.
