Steps

  1. 1Cook grits low and slow, stirring until creamy and fully hydrated.
  2. 2Season shrimp with Cajun-style seasoning, smoked paprika, and a little oil.
  3. 3Sear shrimp quickly in a hot skillet until just cooked through.
  4. 4Melt butter with garlic and a squeeze of lemon to make a smoky pan butter.
  5. 5Spoon grits into bowls, then pile shrimp over the top.
  6. 6Finish with pan butter and taste for salt before serving.

Grit & Soul tip

Shrimp punish overcooking. Pull them when they curl and turn opaque, then let the hot butter finish the plate.

For the people who read the story

The memory belongs below the recipe.

This keeps the Cajun lane bold but controlled: seasoned shrimp, creamy grits, and heat that tastes like flavor first.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
