Source standard

Steps

  1. 1Cook the trinity in butter until soft and sweet.
  2. 2Stir in flour or light roux and cook until the raw edge is gone.
  3. 3Add stock slowly and simmer into a glossy gravy.
  4. 4Fold in crawfish tails near the end so they stay tender.
  5. 5Adjust seasoning with salt, pepper, and Cajun-style heat.
  6. 6Serve over rice while the sauce is still loose and glossy.

Grit & Soul tip

Etouffee should coat the rice, not drown it. Keep the crawfish gentle and the gravy seasoned.

For the people who read the story

The memory belongs below the recipe.

This is the softer side of the Cajun lane: rich, buttery, seasoned, and built for a rice plate.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
