Steps

  1. 1Slice the bananas into coins before freezing. Freeze them in a single layer for at least 3 hours so the blender can break them apart.
  2. 2Add frozen banana, cottage cheese, vanilla, maple syrup, and cinnamon to a food processor.
  3. 3Pulse several times, then blend. Stop to scrape the sides whenever the blade spins without pulling the mixture down.
  4. 4If needed, add 1 teaspoon of milk at a time. Use as little liquid as possible so the result stays thick.
  5. 5Eat immediately for soft-serve texture, or freeze for 20 minutes for a firmer scoop. Let it stand for 5 minutes if frozen longer.
  6. 6Top with berries and serve. Do not expect overnight-frozen leftovers to stay scoopable without softening time.

Grit & Soul tip

Frozen banana provides sweetness and body; use ripe bananas so you do not need much added sugar.

For the people who read the story

The memory belongs below the recipe.

This is a lighter frozen-dessert remake that uses cottage cheese for creaminess instead of heavy cream.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.

Kitchen note

Why it works

Baking rewards control more than improvisation. A fully heated oven and an even pan give the crust a fair start.

Watch for

Let the center set before slicing. The carryover heat is part of the recipe, not a delay.

Make it yours

Add one small personal mark: orange zest, cracked pepper, a honey finish, or a different pan.
