Steps

  1. 1Heat the oven to 350°F. Line an 8-inch square pan with parchment or lightly spray it.
  2. 2Whisk applesauce, egg, brown sugar, and oil in a bowl until smooth. The applesauce replaces part of the fat while keeping the cake soft.
  3. 3In a second bowl, stir oats, flour, cinnamon, baking powder, and salt.
  4. 4Add dry ingredients to wet ingredients and stir just until no dry flour remains. Do not overmix.
  5. 5Spread the batter in the pan and bake for 25 to 30 minutes. A toothpick in the center should come out with a few moist crumbs.
  6. 6Cool for at least 20 minutes before slicing. Store covered at room temperature for 1 day or refrigerated for 3 days.

Grit & Soul tip

Unsweetened applesauce adds moisture but not much browning, so use the toothpick test instead of waiting for a dark top.

For the people who read the story

The memory belongs below the recipe.

This follows the reliable substitution of replacing part of butter or oil with fruit puree, but keeps enough structure for a snack cake.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
