Steps
- 1Whisk the yogurt, egg, and milk in a bowl until smooth. If the yogurt is thick, whisk in the milk slowly so it does not clump.
- 2In a second bowl, stir oats, flour, flaxseed, baking powder, and cinnamon.
- 3Add the dry mixture to the wet mixture and stir just until combined. Let the batter stand for 5 minutes so the oats and flax absorb moisture.
- 4Warm a nonstick skillet over medium-low heat for 2 minutes and lightly spray it. The pan is ready when a drop of batter sizzles gently, not violently.
- 5Spoon about 3 tablespoons of batter per pancake, then scatter a few blueberries onto the wet top. Cook for 2 to 3 minutes until bubbles appear and the edges look set.
- 6Slide a spatula underneath and flip once. Cook 1 to 2 minutes more, lowering the heat if the outside browns before the center is firm.
- 7Serve warm with extra blueberries and yogurt. Refrigerate leftovers for up to 3 days and reheat in a dry skillet.
Grit & Soul tip
Keep the pancakes small and the heat low. Flax and oats make the batter thicker than regular pancake batter, so large pancakes are harder to flip.
