Steps

  1. 1Pat shrimp dry and season with salt, pepper, and paprika.
  2. 2Sear shrimp quickly in a hot skillet until just cooked.
  3. 3Remove shrimp, then melt butter with garlic and sliced peppers.
  4. 4Add citrus juice and scrape the pan into a light sauce.
  5. 5Return shrimp briefly so it gets coated without overcooking.
  6. 6Serve over rice with herbs and extra citrus.

Grit & Soul tip

Shrimp goes from perfect to rubber fast. Build the sauce after the shrimp comes out, then toss it back in at the end.

For the people who read the story

The memory belongs below the recipe.

This is the fast skillet that keeps dinner bright: enough butter to feel good, enough citrus to stay awake.

Grit & Soul keeps the cooking directions easy to reach first. The story still matters, but it should never make someone scroll forever before they can cook.

This is the kind of idea I would save for a cold Sunday. The cast iron move feels exactly right.
