Steps

  1. 1Heat a griddle or cast iron surface until it is hot enough to sear immediately.
  2. 2Divide beef into small loose balls and keep them cold until the griddle is ready.
  3. 3Oil the surface lightly, add beef, then smash thin with a firm press.
  4. 4Season the patties, let the edges brown hard, then scrape and flip.
  5. 5Add cheese, onions, and pickles, then stack into toasted slider buns.
  6. 6Serve hot with sauce on the side so the buns stay soft instead of soggy.
